Avocado Feta Chickpea Salad

Hi everyone! Today I’m going to share one of my all time favorite salads. This Avocado Chickpea Salad is a no-fail lunch whether I’m at home or on the road at work. It’s so absolutely delicious, simple, and satisfying. The avocado is full of healthy, non-industrial fats and the chickpeas and cheese provide a great vegetarian source of protein, too!

What you need to make Avocado Feta Chickpea Salad
- Avocados
- Chickpeas
- Feta Cheese
- Lime
- Cilantro
- Chives
- Celtic sea salt
- Pepper

Buying high quality ingredients is essential to making Avocado Feta Chickpea Salad as healthy as possible. If you can, get organic and fair trade avocados and limes. The feta is one of the most important ingredients to be careful with–especially in terms of flavor. Avoid any pre-crumbled cheese and choose a block instead. The pre-crumbled is covered in anti-caking agents and cellulose that could potentially be toxic. Not only that, but crumbling your own feta tastes so much better and has a creamy, melt-in-your-mouth texture.
