As I was making Vegan Blueberry Orange Bread this weekend, I was having a hard time trying to figure out what time of year it’s best suited for. After all, blueberries are a summer fruit and citrus is winter. But then I remembered that this bread is also known as Bronco bread, so clearly it’s appropriate right now! I’m not even a Bronco’s fan, but I am a fan of this bread and I think I just found a way to justify making it in the summer, fall, and winter.

Somehow, nothing seems to say “fall” quite like football season. Not that football is at all my favorite part about fall. But it’s one of those things I like to have on in the background even though I never actually pay attention or know what’s happening during the game. Mainly because on quiet, relaxing weekends when there’s enough downtime to have it on, chances are I’ll be busy baking in the kitchen!

What do I need to make Vegan Blueberry Orange Bread?

Here’s a list of ingredients to make the best loaf of Vegan Blueberry Orange Bread:

  • Coconut oil
  • Hot water
  • Freshly squeezed orange juice
  • Orange extract
  • Orange zest
  • Aquafaba
  • Sugar
  • Whole wheat pastry flour
  • Baking powder
  • Celtic sea salt
  • Baking soda
  • Organic blueberries (fresh or frozen)

How to Make Vegan Blueberry Orange Bread?

Preheat the oven to 325℉. Line an 8.5×4.5 inch (or similar size) loaf pan with parchment paper or grease well with coconut oil.

In a medium bowl, whisk the coconut oil, hot water, orange juice, extract, and zest. Then add the aquafaba. If you don’t have aquafaba (the liquid from a can of garbanzo beans), mix one tablespoon of ground flaxseed with three tablespoons of hot water. Let stand for about five minutes to thicken up and then mix into the wet ingredients.

In a large bowl, mix the sugar, flour, baking powder, salt, and baking soda. Pour the wet ingredients into the dry and stir until just combined. Fold in the blueberries.

Pour the batter into the loaf pan and smooth it out so it is even. Bake in the preheated oven for an hour and ten minutes or until a toothpick inserted in the center comes out clean. Allow the bread to cool completely before slicing.

Ingredients

  • 2 Tbsp coconut oil softened

Notes

Aquafaba is the liquid from a can of garbanzo beans and acts as an egg. If you don’t have aquafaba, mix 1 Tbsp of ground flaxseed with 3 Tbsp of hot water. Let stand for five minutes and then mix in.
